Baked Sweet Potato Fries


This is recipe is super easy and a healthy alternative.
I made them just for fun but they would be a great addition to burgers or bbq.

Ingredients

4 medium sweet potatoes
4 teaspoons of garlic olive oil
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper

Directions



1. Preheat oven 450 degrees F
2. Peel Potatoes and cut into matchsticks about 1/4-inch to 3/8-inch wide
3. Place cut strips into a large bowl, add oil salt and pepper, toss until coated
4. Spread Potatoes on to a baking sheets in a single layer and bake for 10 minutes
5. Remove the baking sheet and gently turn the potatoes, continue baking for 10 more minutes (watch potatoes and turn frequently to prevent burning or sticking to the pan)
6. Serve immediately

Prosciutto and Arugula Pizza


I had this pizza last summer when I was in Chicago for my cousins wedding and ever since then I have been wanting to make it! I came up with this recipe on my own and I must say it's pretty close to what I remember, minus the cute little italian restaurant in the heart of downtown Chicago!

Ingredients

1 Whole Wheat Organic Pizza Dough
16 (or so) thin slices prosciutto, cut into strips
2 to 3 tablespoons of coarsely chopped walnuts
2 cups of shredded cheese (I used a 5 cheese blend of  mozzarella, provolone, romano, asiago and parmesan cheeses)
1 cup arugula
1 cup of cherry tomatoes, each cut into eighths

Directions

1. Preheat oven 375 degrees F.
2.Arrange prosciutto evenly over dough, sprinkle walnuts over the prosciutto.
3. Cute each cherry tomatoes into eighths. Add to dough.
4.Combine cheeses and sprinkle over prosciutto, walnuts and tomatoes.
5. Bake for 20 to 25 minutes. 
6. Top with arugula and bake for an additional 2 minutes.
